Glucose and fructose are the two major sugars found in grapes that are utilized by yeast to complete alcoholic fermentation.
Please note that this test does NOT automatically measure for sucrose.
Sucrose can only be read on the Sentia if first broken down into its glucose and fructose units (1x sucrose molecule = 1x glucose unit + 1x fructose unit).
